No Bake Oatmeal Bites

No bake oatmeal bites. Sounds too good to be true. Sounds like a lie. Well, I’m here to tell you that your worries are over. The other day I was confined to my home due to the Polar Vortex that has taken residency over Chicago. No big deal. 

Feeling inspired in the kitchen, thanks to Pinterest, and with no desire to cook something that would take me half the day, I landed on this recipe. It was quick, easy and nobody got hurt. Sounds like a one night stand….I digress….


Ingredients

1 1/4 cup oats
1/2 cup creamy peanut butter
3 TBS honey
1/4 cup coconut flakes
1/3 cup chocolate chips
1/3 cup raisins (optional – I added more chocolate chips. Raisins are gross)

Directions

Combine all ingredients in a bowl
Stir well until everything is combined well
Put mixture in the fridge and chill for about 30 minutes
Remove from fridge and roll into balls 
Place bites on a cookie sheet lined with parchment paper
Return to fridge or freezer to chill. After about 30 minutes they are as good as gold. 

TIP – I keep mine in the freezer to 1) preserve them and 2) to have a cold treat!
