4th of July Picnic
Happy Friday everyone! Who is excited for the three-day weekend!! Me!! This weekend is the pinnacle of summer – BBQ’s, fireworks and red, white and blue! Today I’m sharing a fun Fourth of July weekend look and an easy recipe for your family barbeque – the kind of recipe that makes you look like you went to culinary school. Annnnnnnnnd – we made it safely to Rwanda, Africa! Tomorrow we start our trek to the Volcan Mountains to see some Gorillas! YAY! I cannot wait to share more with you all! Back to Fourth of July…. [ezcol_1half][/ezcol_1half] [ezcol_1half_end][/ezcol_1half_end]We love putting together a simple picnic with some drinks and desserts before we watch the fireworks – it’s so nostalgic! My favorite part is playing on the Fourth of July color scheme! I found this great blanket at IKEA (it’s actually a table cloth J ) – it’s perfect for a picnic of two! And the straws – they were a must have and a fab find from Marshalls! They are the perfect compliment to any drink!!
Now on to the best part – the food! A trifle is the perfect Fourth of July picnic retreat – it requires no baking and only has about three steps! Say what?! Layer the pound cake, whipped cream and fruit to fill the bowl – make it in a clear bowl so people can see all that hard work J Create a fun design with the berries on top of your dessert – guaranteed to make you look like a trained pastry chef! RED, WHITE + BLUEBERRY TRIFFLE
INGREDIENTS
- 1/4 cup plus 1/3 cup sugar
- 1/4 cup fresh lemon juice
- 1 store-bought pound cake (12 ounces), cut into 3/4-inch-thick slices
- 1 bar (8 ounces) reduced-fat cream cheese, room temperature
- 1 cup heavy cream
- 3 cups fresh blueberries (three 1/2-pint containers), rinsed and dried
- 3 cups fresh raspberries (two 6-ounce containers)
DIRECTIONS
Make lemon syrup: In a small saucepan, bring 1/4 cup sugar, lemon juice, and 1/4 cup water to a boil over medium heat, stirring to dissolve sugar. Let cool completely, then brush over both sides of cake slices. Quarter each With an electric mixer, beat cream cheese with remaining 1/3 cup sugar on high speed until lightened. With mixer on medium speed, gradually add heavy cream in a steady stream; continue beating until mixture is light and airy (mixture will be like a very soft whipped cream).
Arrange half the cake pieces in the bottom of a 2-quart serving dish. Spoon half the cream-cheese mixture over cake in dollops; spread to sides of dish. Scatter half the blueberries and raspberries on top. Repeat layering with remaining cake, cream-cheese mixture, and berries, piling berries in the Cover, and refrigerate until chilled, at least 1 hour and up to overnight.

I’m totally trying this trifle recipe! My family always makes one but it’s a little different, like they use pound cake, whip cream, vanilla pudding and whatever fresh fruit and just layer it. It’s funny because you’re like the first person besides by family that actually calls a desert trifle, usually when I say it people look at me like I have two-heads! ha. I’m loving your sunnies!! xo
